CURRICULUM

What Will You Learn?

Includes the full content of the Essential Course, then covers six specialist subject areas systematically, from advanced service technique to international etiquette

Advanced Course practical session — Advanced Service Techniques

ADVANCED SERVICE TECHNIQUES

Advanced Service Techniques

Building on the fundamentals from the Essential Course, students advance to silver service and simultaneous service for multiple guests. Role-play scenarios simulate formal dinners, developing the composure to deliver flawless service under pressure.

Advanced Course practical session — Wine & Spirits

WINE & SPIRITS

Wine & Spirits

From core knowledge of regions and grape varieties to storage, temperature management, opening, decanting, and elegant pouring — all covered systematically. Tasting exercises train the palate to distinguish regions and vintages, building genuine recommendation skills.

Advanced Course practical session — Event Planning & Management

EVENT PLANNING & MANAGEMENT

Event Planning & Management

Students learn the complete flow from conceiving a dinner party or reception, drafting run-of-show documents, to directing the event on the day. After absorbing the framework in class, a project exercise has students plan and run a small-scale event, building real management capability.

Advanced Course practical session — Advanced Table Setting

ADVANCED TABLE SETTING

Advanced Table Setting

Taking the table-setting basics from the Essential Course further, students master full formal dinner settings and themed co-ordination. Skills extend to floral arrangement, accessory placement, and harmonising with lighting — developing the versatility to compose any ambiance.

Advanced Course practical session — International Etiquette

INTERNATIONAL ETIQUETTE

International Etiquette

Students learn dietary restrictions, religious customs, and real-world examples of cultural sensitivity for international guests. Simulated dinners with multi-national guest scenarios put cross-cultural understanding into practice, nurturing a genuine global sensibility.

Advanced Course practical session — Luxury Garment Care

LUXURY GARMENT CARE

Luxury Garment Care

Advancing beyond the garment-care basics of the Essential Course, students learn high-level care by material — suits, gowns, leather goods — with appropriate storage for wool, silk, cashmere, and other delicate fabrics, including emergency remedies when issues arise.

LEARNING FLOW

How the Course Progresses

Across 2 months and 12 days, you step up systematically, including the full content of the Essential Course

1

Month 1 (first 6 days): Full review of Essential content

Manners & etiquette, household management, table setting, tea & coffee service, garment care, and communication skills are reviewed in full, establishing a solid foundation.

2

Month 2 (final 6 days): Advancing into Advanced-level subjects

You then extend your skills into advanced service technique, wine & spirits, event planning & management, advanced table setting, international etiquette, and luxury garment care.

* Complete beginners can follow this order without difficulty. Essential Course graduates may treat Month 1 as a review.

FIELD TRAINING

Real-Service Field Training

Real Service Experience

Students attend an afternoon tea or full-course dinner at a top hotel or restaurant as guests, observing professional service staff up close — their movements, timing, and attention to detail. Understanding the guest's perspective is an essential foundation for delivering high-quality service.
